    TWICE BAKED POTATOES

    Ingredients:

      4-6 Large Baking Potatoes
      6-8 Ounces Cream Cheese
      1 Cup Sour Cream
      2 Tablespoons Butter
      1 Teaspoon Salt
      1/2 Teaspoon Pepper
      4 Ounces Shredded Cheddar Cheese

    Instructions:

      Scrub potatoes and prick with a fork a few times.
      Microwave or bake the whole potatoes until done.
      Cut 1/3 off the top of each potato and scoop the insides out into a large bowl, reserve the shells to be refilled.
      Add cream cheese, sour cream and butter to potatoes.
      Beat potato mixture with an electric mixer set at medium speed until smooth and creamy, about 3 minutes. (I add a little milk to thin the mixture)
      Add salt, pepper, and shredded cheese. Mix well.
      Spoon potato mixture into shells and bake until heated through, about 15 minutes.
