Mango Fruit Salad
This tropical fruit salad features mangos tossed with kiwi and blueberries in a light fruity sauce
INGREDIENTS:
1/2 cup Knott's Berry FarmŽ Apricot Preserves
1/4 teaspoon grated lime peel
1 tablespoon fresh lime juice
2 large mangoes, peeled, pitted and cut into chunks
3 kiwis, peeled, cut into chunks
1 cup fresh blueberries
PREPARATION:
Beat apricot preserves, lime peel and lime juice in medium bowl with wire whisk until well blended. Add mangos, kiwis and blueberries; mix lightly.
Serve immediately, or cover and refrigerate until ready to serve.
